Happy Boxing Day

If you celebrate Christmas, I hope it was holly and jolly.  We had Christmas today and it was good but as chief cook, bottlewasher and Santa's elf, I'm a big fan of Boxing Day.    We made Christmas cookies and frosted them yesterday while we watched NORAD's Santa Tracker follow Santa as he delivered his 7 billion some odd presents.  The kid is allergic to milk so the sugar cookies have to be made without butter.  They are incredibly sticky and the dough needs to be practically frozen to roll out.  We managed a good batch though and I managed not to cuss.  Here's the dude that turned out the best.

Even snowpeople need cheesy Christmas sweaters.  Tomorrow is The Hobbit and his long expected movie with the kid.  Tonight, I'll leave you with the last bit of Dylan Thomas's A Child's Christmas in Wales.

That cookie looked very pretty! Did you use margarine in place of butter?

I hope you'll enjoy The Hobbit as much as I had. Have seen it twice!

We used shortening and this stuff called Earth's Balance. The cookies taste fairly close to what the kind with butter taste like but I think the dough must be really different. I'm going to have to experiment with some more recipes and butter substitutes. This one seems like it doesn't call for enough flour or something. I've managed to get a decent royal icing recipe with no milk so I'll succeed with the cookie part. I found a decent dairy free pumpkin pie so I know all things are possible with food. 8-)

My kid is 9 and has been on a Hobbit countdown since it was announced that they were going to make it and I can't wait for the reaction to it all. We're very excited.
